This recipe is from Tina and everyone at work can agree that this is amazing! Cowboy crack is found at nearly every work party. So easy to make!
1 can (11 0z.) Shoepeg Corn, drained
1 can (19 oz.) Black Beans, drained & rinsed
1 firm Avocado, chopped
2 Plum Tomatoes, chopped and seeded
1/2 Red Onion, chopped
1/4 cup Oil, use vegetable or canola… do not use olive oil!!
1/4 cup Red Wine Vinegar
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Cumin
3 tbsp Sugar (this is the secret ingredient in my opinion)
1 clove Garlic, finely chopped
1. In a large bowl, mix together corn, beans, avocado, tomatoes and onion.
2. In a small bowl mix together the dressing ingredients.
3. Add the dressing to the large bowl and mix. Serve immediately or save in the fridge for later!
**When picking out the avocados, try to find one that has a dark skin and just slightly soft to the touch. It should not be squishy. Also, I would recoommend buying two avocados. One that you think is perfect and another one that might be “too firm” because there’s nothing worse than making this recipe and having a bad avocado that you can’t use.**
